Is Infused Coffee Cheating? The Fermentation Fight in Coffee Competitions
Why fermented and infused coffees split the World Barista Championship, Cup of Excellence, and Best of Panama: Cinnamongate, the 2024 rule change, and why taste can't prove infusion.
Nearly all coffee ferments. Microbes break down the fruit on almost every lot, and controlled techniques like sealed tanks, selected yeast, and carbonic maceration are now normal parts of specialty coffee. So the fight in coffee competitions isn’t really about fermentation. It’s about a harder line: where does processing end and flavoring begin, and does everyone have to say which one they did?

How fermentation became a competitive edge
The modern era arguably starts in 2015, when Saša Šestić won the World Barista Championship with a Colombian Sudan Rume, part of it processed by carbonic maceration. He is widely credited with bringing the technique into specialty coffee, and it worked because controlling the vessel, temperature, time, and microbes let producers build more distinctive, sometimes more consistent cups.
None of that was controversial at first. It read as another processing advance, like better cherry sorting or drying. The tension arrived later, when competition coffees started showing up with uncannily literal flavors: cinnamon, rose water, strawberry candy, tropical fruit, notes more specific and more intense than judges expected fermentation alone to produce.
Cinnamongate
The flashpoint got a nickname. In 2017, Irish competitor Stephen Houston brewed a Costa Rican coffee called El Diamante at the World Brewers Cup, and its cinnamon character was so strong that it drew open suspicion. The episode became known, half-jokingly, as Cinnamongate, and it turned into shorthand for a question the industry couldn’t answer from the cup alone: was that cinnamon fermented, or added?
That question is genuinely hard, because the answer in this case cut against the suspicion.
Intense flavor is not proof of infusion
El Diamante, from Carlos Morera’s Finca El Cerro, had placed in the 2017 Costa Rica Cup of Excellence with the same loud cinnamon-and-menthol profile. According to Roast Magazine, Darrin Daniel, then executive director of the Alliance for Coffee Excellence, said the producer insisted nothing was added, and that when they tested the coffee it looked like a byproduct of fermentation and processing rather than a foreign ingredient. That is Daniel’s account of ACE’s determination, not a published lab report, but it points to a real problem: a coffee can taste implausibly like cinnamon candy without anyone having added cinnamon.
So sensory policing runs two opposite risks, and they’re equally bad:
- False negatives: an infused coffee is passed off as pure fermentation.
- False positives: an inventive producer is accused of cheating because their honestly fermented coffee happens to taste unusually literal.
A judge can reasonably be suspicious of a cup, but suspicion isn’t evidence, and taste can’t establish how a flavor got there.
The barista’s dilemma
The person most exposed to that ambiguity is the competitor. Šestić has argued publicly that infusion is more common than the industry admits. In a 2021 account, he described tasting dominant-cinnamon coffees at the 2018 World Barista Championship and at a 2019 Brewers Cup, being told the flavor came from special yeast or microbes, and doubting that microbes alone could do it. He also described judging a competition in Ecuador where a tropical-fruit coffee was disqualified after testing, and said the producer later told him he had added fruit flavoring during and after fermentation, and that the same coffee went on to place in an Italian Brewers Cup with a competitor who didn’t know it had been flavored.
These are Šestić’s allegations and recollections. No competition body has published findings confirming them, and they should be read as his account rather than settled fact. But they name a real structural risk: a barista can violate a rule they didn’t know they were breaking, because the producer, exporter, importer, or roaster handed them an incomplete processing story. You can be responsible for what’s in the cup without ever having been told what’s in the cup.
The words are the problem
A lot of the confusion is vocabulary. “Anaerobic,” “co-fermented,” and “infused” get used as if they were interchangeable, and they aren’t.
Controlled fermentation might mean limiting oxygen, holding a temperature, adding a selected yeast or bacteria, recirculating coffee mosto, or fermenting whole cherries. Additive processing might mean adding fruit, juice, sugar, flowers, spices, acids, enzymes, essential oils, or flavoring products. The trouble is that these blur together. Adding pineapple doesn’t just add pineapple aroma; it also adds sugar, acid, water, and its own microbes, which change the fermentation itself. So “co-fermented with pineapple” doesn’t tell you whether the fruit was fuel for the microbes, a source of new microbes, or a direct flavoring, and “anaerobic” tells you nothing about whether anything was added at all. The rules split, and competitions chose opposite answers
Faced with the same problem, the big competitions went different directions.
The World Coffee Championships moved the boundary. The older World Barista Championship rules prohibited additives, flavorings, and the like from the moment the cherry is picked through extraction. Beginning with the 2024 rules, the World Barista Championship and World Brewers Cup instead prohibit additives only after the coffee reaches the dried “green coffee” stage. In effect, the line moved from cherry to dried green bean, so fruit, spice, or microbial inputs added during pre-drying processing are no longer grounds for disqualification. The change was framed as a clarification, and it’s narrower than “anything goes”: you still can’t flavor green, roasted, or brewed coffee. But a coffee that would once have been ineligible can now compete at the world championships.
Best of Panama went the other way. Ahead of its 2024 auction, the Specialty Coffee Association of Panama disqualified four coffees it judged had been altered with foreign additives, saying it wanted to protect the expression of Panama’s terroir. Its language about a coffee’s “natural DNA expression” is best read as a statement of competition philosophy, not a lab-defined standard. Cup of Excellence, meanwhile, bars non-coffee ingredients like fruit and spice while allowing selected microbial cultures and coffee-derived mosto, and Daniel has said producers were disqualified for using outside ingredients and denying it.
Put together, the same bag of coffee might be legal at the World Barista Championship, ineligible at Cup of Excellence, disqualified from Best of Panama, and sold commercially as an innovative co-ferment. There’s no global consensus because the competitions are trying to reward different things.
Why the scoring raises the stakes
Competition formats add their own pressure. The World Brewers Cup Open Service scores the accuracy of a competitor’s descriptors, and the World Barista Championship sensory score rewards how well a competitor’s stated flavors match what the judges taste. A cup that unmistakably tastes like strawberry candy is easier to describe precisely, and to build a dramatic routine around, than a delicate coffee whose floral and citrus notes shift as it cools.
That doesn’t mean judges automatically reward the loudest coffee; balance, texture, brewing skill, and presentation still count. But critics worry about a slow arms race, where competitors chase ever more process-forward lots because subtle traditional coffees struggle to land in a tightly scored routine. The fear is that the contest drifts from “who can best understand and prepare an exceptional coffee?” toward “who has access to the most engineered green coffee?”
What “authenticity” even means
Underneath the rules is a real disagreement about what a coffee competition is for.
The purist position emphasizes terroir. A green-coffee contest, the argument goes, should judge the variety, the growing conditions, the harvest, and the craft of transforming the fruit, not a producer’s ability to add a loud external ingredient. From that angle, an undisclosed strawberry co-ferment is like entering flavored wine in a traditional wine competition without saying so: it might be delicious, but it belongs in a different category.
The opposing view is that there’s no pristine, unprocessed expression of terroir to protect. Washed and natural coffees already taste different; drying reshapes the cup; selected yeast changes the microbiology; even carbonic maceration was experimental once. Producers, this camp argues, should have the agency to make products buyers value, and wealthy consuming-country institutions shouldn’t get to decide which innovations origin is allowed to use, especially when added substrates and controlled microbes can improve consistency, lift less-famous varieties, and earn better prices. Both sides claim to be defending producers.
Disclosure is the real fix, and it’s hard
Most people land on transparency as the compromise: don’t ban innovation, just require that additions be disclosed. The catch is that disclosure is difficult to enforce.
Lab testing helps unevenly. Gas chromatography can catch some stable, distinctive additives like cinnamon or anise essential oils, but fruit additions are much harder, because their compounds can be transformed or degraded and can overlap with things fermentation produces naturally. And the information degrades along the chain from producer to processor to exporter to importer to roaster to competitor. A producer might treat added fruit as an ordinary fermentation input. An exporter labels it “anaerobic.” A roaster passes along a romantic process note. By the end, the competitor repeats what they were told, in good faith. Real disclosure needs a shared vocabulary and traceable records, not just asking the barista whether the coffee was “infused.”
There are also food-safety and allergen concerns about undisclosed ingredients. So far those are mostly warnings rather than documented cases of harm, and the point isn’t that co-ferments are unsafe, but that buyers, roasters, and judges should know when non-coffee material was deliberately added.
So the most defensible conclusion is narrow. Experimental fermentation isn’t cheating, and a fruit co-ferment isn’t inferior. The controversy is real only when fundamentally different products compete in one category, when additions go undisclosed, when a process name implies microbes made a flavor that was added, or when judges treat flavor intensity as proof of either quality or fraud. The central question isn’t tradition versus innovation. It’s whether a competition is judging agricultural coffee, processing craftsmanship, or flavor design, and whether everyone in the room knows which game is being played.
