Why "anaerobic" tells you so little
A process label is a strong hint, not a spec sheet. The word "anaerobic" can sit on a whole-cherry ferment or a depulped one, a 24-hour tank or a 200-hour one, a spontaneous batch or an inoculated one, with or without added fruit. Those aren't the same coffee. This tool reads the terms it recognizes, states what each one establishes, and then lists the questions the label still hasn't answered.
It checks a bag against five questions a full process description would answer: what was fermented, in what environment, by which microbes, with what added, and under what controls. Most labels answer only one or two, which is normal, and worth knowing before you read a fruit note as a promise. Deliberately, the tool never predicts flavor. There's no defensible equation from "120-hour anaerobic" to a tasting score. The most reliable way to learn what you like is to brew the coffee and write down what you found.
