Sibarist Filters: Is Faster Better for Pour-Over?

Sibarist sells its filters on a simple pitch: faster, cleaner, more flow headroom than a standard paper. The marketing language is speed and clarity, and the price is several times what a Hario or Kalita filter costs.
The useful question isn’t whether they’re faster. They are. It’s whether a faster filter makes a better cup, or just a different one. The short answer: faster is a constraint you can use, not a flavor you can buy.
What Sibarist filters are
Sibarist makes two shapes. Cone filters fit V60-style brewers, including the Hario V60, Hario Switch, and Origami. Flat filters fit flat-bottom brewers like the Kalita Wave, Orea, and April. Within those shapes are two papers:
- FAST is the high-flow line. Sibarist positions it for finer grinds and higher-extraction recipes without stalling, aiming at clarity and a silky texture.
- B3, developed with World Brewers Cup champion Matt Winton, is denser and slower-flowing. It still flows well but leans toward sweetness, body, and even extraction.
The Flat filters have a smooth, non-fluted wall. Sibarist’s own claim is that this “ensures even brewing, eliminating bypass,” because the paper sticks to the dripper wall when wet instead of trapping grounds in the folds of a wave-style filter. The paper is abaca and cellulose, made in Barcelona, and Sibarist describes it as compostable. (That’s a manufacturer claim, not a third-party certification.)
Why filter flow rate matters
A filter isn’t a neutral strainer. The paper sets how fast water can leave the bed, how the bed clogs as fines migrate, how much water bypasses the grounds down the side, and how long the coffee and water stay in contact. Change the paper and you change all of that at once.
The clearest measurement of how much filters differ comes from Jonathan Gagné’s in-depth analysis of coffee filters. Pouring clean water through different papers, he found flow rates that varied by an order of magnitude, driven by pore size, paper thickness, rigidity, and how well the filter sticks to the dripper wall. (He tested Hario, Cafec, Chemex, and metal filters, not Sibarist, and clean-water flow isn’t the same as flow through a packed coffee bed, but the principle holds: paper is a real variable.)
Gagné also describes the failure mode that matters here. When fines clog a filter unevenly, water finds the open paths and channels through them, over-extracting along those channels and leaving astringency in the cup. So flow only helps if it stays even. A fast filter that channels isn’t better than a slower one that drains uniformly.
Faster is a constraint change, not a flavor
Here’s the part the marketing skips. If you keep the same grind, dose, water, and pour, a faster filter just shortens contact time. Less contact usually means lower extraction, which can read as thin or sour, the opposite of an upgrade. Speed on its own doesn’t sweeten a cup.
What a fast filter gives you is room. Because water drains quickly, you can grind finer, push a higher-extraction recipe, or rescue a coffee that would otherwise stall into a slow, muddy finish, all without the bed bogging down. The gain isn’t the speed. It’s the recipe space the speed opens up.
That framing lines up with how extraction works. The SCA’s brewing chart ties three things together: strength (TDS), extraction yield, and brew ratio. What makes coffee taste good is landing in the right region of that chart, not how quickly the water got there. (The SCA is actively revising that chart, partly because it ignores how evenly a bed extracts, which is exactly the uniformity point above.) A faster filter only helps if you use the headroom to hit a better strength and yield. So pair it with a finer grind and don’t chase your old brew time, or you’ll just under-extract faster.
What the cup tastes like
The answer is that good reviewers disagree, and there’s no published TDS or extraction-yield data to settle it.
Coffee Circle’s blind test of a Yirgacheffe found the Sibarist cup “smoother,” with “more depth” and “more body” than the same coffee through a Hario paper, while the Hario cup was “clearer” but “less intense.” Worth knowing: Coffee Circle sells both filters, so it isn’t a disinterested judge.
Vibrant Coffee Roasters ran their own blind V60 filter test and reached the opposite verdict, recommending tabbed Hario and a white abaca paper and explicitly not recommending Sibarist. So the strongest claim the evidence supports is modest: Sibarist tastes different, often fuller and smoother, and whether you prefer it depends on the coffee and your recipe.
When Sibarist is worth it, and when it isn’t
The case for Sibarist is real but narrow. It’s a tool for specific problems, not a default upgrade.

Basic Barista’s review, from a shop that sells the filters, lands in the same place: great to have for tricky coffees, but for the daily home brewer, “putting your money into a better grinder or better coffee beans will have a more positive impact than the filters.”
That price gap is the sticking point. A Hario V60 filter runs about $0.10 in a 100-pack. Sibarist runs roughly $0.44 a filter in a 100-pack and closer to $0.70 in the common 25-packs, so four to seven times the cost depending on how you buy them. For a coffee you paid $40 a bag for, that’s noise. For a daily driver, it adds up fast.
How to test them yourself
The unfair comparison is “same recipe, faster filter,” because that just shortens your brew and under-extracts. Sibarist’s value is the recipe space it opens, so test that directly:
- Baseline. Brew your usual coffee with your standard filter at your normal grind, dose, and pour. Record drawdown time, TDS if you have a refractometer, and tasting notes.
- Same recipe, new filter. Repeat with Sibarist, everything else held constant. Expect a faster, likely lighter cup. This is the diagnostic, not the goal.
- Dialed in. Grind finer with the Sibarist until the cup peaks, ignoring your old brew time. This is the fair test, and where Sibarist should show its advantage if it has one.
- Blind it. Taste the standard cup, the same-recipe Sibarist, and the dialed Sibarist blind, and write down clarity, sweetness, body, and any astringency on the finish.
Use a coffee that throws fines or tends to stall, like some natural Ethiopians, since that’s where the extra flow has the most to offer. Log extraction yield if you can, so you’re comparing numbers and not just impressions.
The bottom line
Sibarist filters are neither hype nor snake oil. They’re a genuine change to how a brew flows, and the mistake is treating that as a universal upgrade instead of a recipe-specific tool.
If you already dial in pour-over and want to experiment, buy a small pack of FAST, start with a light roast, grind finer than usual, and don’t chase your old time. Be more skeptical of B3 as a must-buy. It can make a sweeter, fuller cup, but it’s the easier of the two to approximate with a cheaper paper. And don’t make either your default filter unless you consistently prefer the cup and the cost genuinely doesn’t bother you.
